Taking the iconic gin martini as a starting point, we worked backwards from that twist of lemon, utilising native flora to create a Sydney Gin that was truly worthy of the name. Lime, lemon and orange peel all come together with a hit of aromatic lemon myrtle to give this classic gin a citrussy lift, while distilling in small batches in copper stills preserves the silky-smooth mouthfeel that makes this such a captivating spirit.
