Classic, refreshing and sparkling (just like Sydney!), the Tom Collins is a fantastic way to drink Sydney Gin.
First founded in 1876, this cocktail has stuck around for this long for a reason; it’s delicious.
20ml fresh lemon juice
20ml simple syrup (1 part water, 1 part sugar)
40ml Sydney Gin
Garnish: Thyme sprig and blueberries
Add the lemon juice, simple syrup and gin into a shaker with ice and shake well. Strain into a tumbler over fresh ice. Top with club soda. Garnish with a sprig of thyme and a few blueberries.
